Description

Chocolate has been known throughout history as a medicine and as an aphrodisiac. Sensual in nature, chocolate evokes a sense of warmth and comfort, as well as a deep satisfaction of the mind, body, and libido. We’ll start 2000 years ago with the Mayans and learn about their chocolate discovery. We’ll eat raw chocolate via the Cacao Beans, later converting them into cacao nibs. With our mortar and pestle we’ll make raw chocolate to drink as the Mayans and Aztecs did. Next, we’ll taste our way through the European’s conversion of chocolate, which removed the spice and added the sweet. We’ll taste our way through modern chocolate, starting with white chocolate, and moving from a 30% chocolate mass to 100% chocolate mass. From sweet and white to bitter and dark, it is an experience of the senses. We’ll next move to various applications of chocolate, moving to a hands-on part of class to make hot chocolates, chocolate-covered fruits, and chocolate mousse to further understand the dimensions of this wonder.
