Fun class, great food and darling location. Everyone divides into small groups and each group cooks a couple of the recipes, then tastes everything as a group at the end of class. We had a nice bunch of people in the class and lots of fun.

October 16, 2014: Spanish Tapas
Yes, they’re small plates of food but you’ll make plenty of them in tonight’s class. We will go to Spain’s finest cafes and bars which consider this tradition of tapas a ritual on a daily basis. You will be saying OLE by the end of class and have a set of recipes to make your friends and family jealous of your new skills.

What’s on the Menu:

  • Tortilla Espanola
  • Albondigas (Spanish Meatballs in a spicy tomato sauce)
  • Vegetable Empanadas
  • Paella with Shrimp and Chicken
  • Arroz Con Leche (Rice Pudding Cups)

Red or White Wine Sangria tasting only; you are welcome to bring in your own bottle of wine.

October 20, 2014: Stocks, Sauces & Poaching — Cooking Basics Part 2
Our Cooking Basics fundamental classes focus on techniques for all skill levels. Students will work in groups to gain hands-on experience, supplemented by an instructor demo. The class goal is to provide a fundamental knowledge and practice of the Classical Mother Sauces – five basic sauces, which are the starting points for making various secondary sauces or “small sauces.”

What’s on the Menu:

  • Hollandaise – demoed – with poached eggs
  • Bechamel
  • Classic Tomato
  • Veloute
  • Coulis
  • Chicken or Vege stock vs. broth – Mire Proix – Bouquet Garni
  • Creamy vodka sauce over pasta or baked lasagna (this can be with ground meat)
  • Chicken Mushroom veloute
  • Poached egg with Hollandaise Sauce
  • Fruit Coulis Sauce over ice cream or pound cake

October 23, 2014: Pizza Night Workshop
When the moon hits your eye, its time to get a slice of life at our Gourmet Pizza night. Nothing says party like a delicious slice of pizza. Learn the handy skills of making your own homemade pizza, a variety of sauces with fresh toppings. You’ll never order in again! Dress comfortably—we’ll provide aprons for all to wear—and be prepared to eat some spectacular pizza of your own creation!

What’s on the Menu:
Bake or Grill your dough

  • Basic individual 12 inch pizza dough by hand
  • Sauces – red (salsa d’pomodoro)
  • Toppings: mushrooms, onions, olives, pepperoni, peppers
  • Cheeses: shredded mozarella
  • Dessert: Nutella dessert pizza with slivered almonds

October 26, 2014: Sautee, Grill & Blanch – Cooking Basics Part 3
The Basics Cooking classes focus on techniques. Students will work in groups to gain hands-on experience, supplemented by an instructor demo. The class goal is to provide a fundamental knowledge of the subject. These classes can be taken as stand alone classes or as a series. Brief knife Skills included with lesson.

What’s on the Menu:

  • Sauteed chicken in white wine pan sauce
  • Sauteed fruit or vegetables
  • Grilled Caesar with homemade dressing
  • Grilled Seasonal Vegetables OR fruit kebabs
  • Blanched asparagus or broccoli
  • Rice Pilaf

October 27, 2014: Roast, Braise & Steam — Cooking Basics Part 4
Cooking classes focus on techniques. Students will work in groups to gain hands-on experience, supplemented by an instructor demo. The class goal is to provide a fundamental knowledge of the subject. Brief knife skills included with lesson.

What’s on the Menu:

  • Fish in Papillote or Roasted/Baked white fish with gremolata sauce
  • Braised Chicken Thighs with Button Mushrooms (braise and stew)
  • Roasted Herbed Potatoes or Rosemary Roasted Vegetables
  • Rice Pilaf
  • Baked apples and pears with (optional) nuts

Must be 21 and over to taste wine, beer or alcohol.

For evening classes, you can also bring in your own bottle of wine or beer if you would like. There is no corkage fee.
